Bombay Sapphire Spiced Apple Tea

50mls Bombay Sapphire

15mls Martini Bianco

20mls fresh lemon juice

3 thin slices of apple

1 cinnamon stick; 3 clove; 3 cardamom pods (broken); ¼ vanilla bean

1 black tea bag

15mls honey

150mls water & 50mls cloudy apple juice

Method:

Add water, honey and apple to a pot and heat

Add spices and tea bag when hot and allow to simmer for 5 minutes

Remove tea bag and add apple juice. Strain.

Add Bombay Sapphire, Martini Rosso and fresh lemon juice and stir before serving.

Serve in a large tea cup

Garnish: Orange zest, spent apple slices and nutmeg sprinkle

35mls Grey Goose La Poire

75mls Warm Speciality Filter Coffee

15mls Demerara Sugar Syrup

Double Cream

Garnished with ground nutmeg

Method:

Build all ingredients in a French coffee glass. Float double cream on top.

Dreamland, Margate’s super instagrammable amusement park, has reopened its doors with the ‘Frosted Fairground’ ; a festive treat spanning their retro designed rides, an undercover icerink, Santa’s Grotto and plenty of edible goodness including vegan candyfloss from Naughty Floss for you to wear as St Nick’s beard. Oh, give over – you’d totally do that for the ‘gram.

Sprinkled like fairydust over the next few weeks are incredible one-off events from Fierce Angel on Saturday 23rd December and a disco-tastic New Year’s Eve extravaganza at the park’s pubs Cinque Ports and The Quarterdeck.

Here at HOC HQ, we’re open to anything that has ‘bar’ and ‘Coco’ in the same sentence. Usually saved for countless invites hitting our mailbox for the latest venue launches, we were intrigued to see what our namesake had to offer. With a beach bar theme and the promise of tropical cocktails and Brazilian inspired bar snacks – we were sold. After a crazy weekend of events, we sent our resident Cocktail lover Jenna to spice up her Tuesday night before heading out on the town, there was many new spots to visit that night, but first, Coco’s….

“Ok, I admit it, I absolutely love bars. From working in one when I was 18 and crying over not knowing how to make a Pornstar Martini to propping myself up on Epernay’s bar after far too many glasses of Champagne – visiting bars is what I do, and I like to think I’m pretty good at it. Over the years, I’ve become abit more discerning when it comes to where to get a good drink. Domino Club is a new favourite that I always recommend and I always swear by Bilbao’s G&Ts – so it’s always good to try somewhere new. Walking into Coco’s, it’s quite clearly a reworking of the original Cabana restaurant. Although the interior is faultless and they’ve got the theme dead on – you still feel like you’re in a chain. Now some people may like the security of being within a known brand, but I’m a little more into the independent bars, so this was going to be a slightly hard sell.

Unfortunately for us, the welcome was not as warm as the Brazilian sunshine. Walking up to the bar, I knew I was slightly early for my reservation (it was throwing it down outside) and the venue was totally empty of guests. Asking for my contact at the bar, a very flippant Bartender pointed over to a table of managers telling me to go get her myself. Woah…..pretty sure that is not at all appropriate, no matter how early I am. To keep the peace, I agreed and went over to the table of dumbstruck faces who had no clue why I was interrupting their meeting. Luckily for me, Jam was incredibly accommodating and switched the whole welcome around. She took us to a high table with a large pendant lantern above and welcomed us to try a selection of their cocktails and tasty bar snacks, with her chirpy nature and recommendation of Halloumi Fries, Coco’s was back in the game.

Looking at the cocktail menu, it is exactly what you’d expect. Sweet tropical cocktails that mostly involve coconut, passionfruit and lime. One thing that did make me laugh was their ‘Lagerita’ which some may know as typical of Cancun. It is literally a giant frozen Margarita with a bottle of lager stuck in the top – amazing if you’re at a beach club in Brazil, but maybe not ideal if you’re stopping off for a drink after Christmas shopping. Ordering a ‘Sprinkles Margarita’ and a ‘Jungle Fever’ it was clear that these cocktails were going to be incredibly sugary. Both cocktails were cute with hundreds-and-thousands sprinkles and a jelly snake on top. As said, definitely not my usual cup of tea but I can see the market for it in a shopping centre like Trinity.

Feeling the sugar rush – it was definitely time for some food. I love casual dining with nibbles and nice drinks, with tapas being my usual choice, but Brazilian bar snacks would definitely do the job. Glancing over the menu, they’ve got everything from Mexican influence to good old burgers. Opting for Chilli Squid, Halloumi Fries & Guacamole – I was totally impressed. The Chilli Squid had a light batter with a delicious dipping sauce and the Halloumi Fries had me dreaming about them when I got home.

Needing a few more cocktails to take us through, I was intrigued by the ‘Cheeky Chilli Martini’ which sold itself to be a concoction of Gin, Apple, Chilli & Coconut. Now I love Gin and anything with a little kick always seems to hit the spot, so I was really excited to try this. When the cocktail arrived, it was so so cute. In a classic Martini Glass with half Chilli’s working as Devil Horns, it spoke to me on a personal level. Any cocktails that are totally instagrammable have got my vote, but unfortunately, that was the only thing going for it. Taking my first sip, it was like drinking a bottle of Coconut Syrup. I couldn’t get the Chilli, I definitely couldn’t get the Gin and I couldn’t even finish the drink. It was sad, as I REALLY wanted these cocktails to be good but either the bartenders aren’t trained or their specs are wayyy off. It’s odd, as obviously a ton of thought has gone into the branding, the interiors and the food – but the Cocktails are seriously 80’s, but not in a good way. Thankfully, the bartender managed to mix up a classic Margarita for me, and it was good – but that taste of Coconut clung on!

All in all, Coco’s really is a fun place to have a few drinks, but I can see why it hasn’t taken off yet. Not only do they only stay open until 9:30pm which is earlier than when most people come out, the layout is a slight afterthought with it clearly being a rework of half the restaurant. This paired with a lacklustre welcome, ‘Nando’s Style’ ordering at the bar and overly sweet cocktails, they’ve got a long way to go before this becomes a destination bar for most Cocktail lovers. The atmosphere is great and I stand by the fact that their interior is seriously well thought out, so maybe the bartenders are letting them down. I urge anyone who loves Brazilian food and music to pop into Coco’s when you’re next around for some of the best damn Halloumi fries in Leeds, but maybe stick to the beers. I’ll definitely be back to visit in the Summertime for some beach vibes, but I don’t think this will be #TeamCoco’s newest haunt anytime soon. Shame, as a bar with our namesake should be the perfect place to brainstorm over a few cocktails, but it isn’t going to be Coco’s.”

Move over gin, we’re all about whisky this winter and we’ve found the best place to get your spirit high this christmas at the Join The Experimentalists at The View from The Shard.

This Christmas the tipple on everyone’s lips is whisky – gone are old-fashioned views of a dusty bottle in your grandad’s drinks cabinet and hello to intriguing cocktails. To learn more about the world of whisky we caught up with one of the industry’s Girl Bosses Georgie Bell, Global Malts Ambassador for John Dewar and Sons.

HOC: Hey, Georgie. Okay, talk to us about whisky. To us, this brings up visions of crystal decanters, boys clubs or a cheap bottle in the supermarket for your granddads birthday. What does whisky mean to you?

Georgie Bell: Whisky is my life and my main passion – it’s huge for me! Sure it used to have the ‘boys club’ stereotype but I feel this is slowly diminishing. Whisky for me is companionship – a dram of Scotch can bring together old friends and new, loved ones and colleagues. When I haven’t seen my friends in a while we’ll have a whisky together, and toast the occasion. Whisky is male and female, old and young, straight and in a cocktail.

HOC: Why do you think it has such a fusty preconception?

GB: This perception was mainly built up through advertising in the 1960s and 70s, but this has changed, significantly. Gone are the days where it’s ‘beer for the lad, white wine for the lass’ – there are no gender boarders when it comes to drinks (like there shouldn’t be for anything, for that matter). 8 years ago, before I got to actually know and understand what whisky is, I believed it was my dad’s drink; but then I learnt about the history and the role women have had to play since the very beginning, I was taught how to drink it – for this doesn’t necessarily have to be straight up, and the more I read, the more I tried, I just got it.

HOC: How would you recommend readers, especially female readers give whisky a good go. What’s your recommended gateway whisky cocktail?

GB: Go to your favourite bar, and ask the bartender to make you a Dewar’s 12 Penicillin. This is a shaken cocktail with Dewar’s 12, lemon juice and honey syrup, based on a whisky sour, and in my opinion, it’s delicious. This could be the drink that turns you!

HOC: Whisky and winter seem like a match made in heaven – whats your top pick for a warming whisky this festive season?

GB: For me, winter is Aberfeldy 18 with a square of dark chocolate on the side – or, if you’re feeling particularly festive, a mince pie. Add a touch of water to the whisky to open it up and bring out the sweetness. The whisky is full of rich fruit notes, salted caramel, vanilla cream and spices – it’s festivities in a glass.

HOC: Something that definitely appeals about whisky is the rich history and romantic notions of a distillery in the depths of Scotland. What’s your favourite whisky origin story?

GB: Aberfeldy distillery was set up by the Dewar’s brothers – Tommy and John Alexander – in 1898. They’d taken over their fathers business 18 years prior and grew it from just a Scottish drink to one savoured across the world – Tommy even set sail for 2 years around the world growing Dewar’s and introducing it to new drinkers as far as China and beyond. They were so successful in their endeavours they opened the distillery to do their father proud and grow the business. I love this story for the family angle and commitment to their father’s legacy.

HOC: We write a series called ‘Girl Bosses of Great Britain’ championing female business women, especially those in male dominated fields. How have you experienced working in a male dominated arena, are there many girls like you in the business?

GB: Women have always been a part of the whisky industry – from Helen and Elizabeth Cumming who founded Cardhu distillery to Bessie Williams, a famous past distillery manager at Laphroaig. Stephanie MacLeod is our master blender, and she’s one of several female blenders in the industry. From a brand ambassador perspective there are a few of us on planes, sharing the joy of whisky to the world. Sure I’ve had more than a few backlashes (‘do you really drink it?’ ‘was it just a marketing ploy to hire you, a female?’ ) and some overtly sexist remarks, but each time I take the comment with empathy due to misunderstanding of the industry, and often pull out a silver bullet of information to shut it down.

Overall, whisky is an all-encompassing, very friendly and welcoming industry and those involved are happy to see it progress just like other industries. It’s not about whether you’re male or female, rather it’s if you have true passion for it.

HOC: In a nutshell, how did you get to where you are today in your career?

GB: Hard work, dedication, putting myself out there, and a lot of study. When I graduated I knew I wanted a job in whisky, but there was no caved career path – so I did a second degree in distilling (bio chemistry and chemical engineering) to prove to myself, and to others, that I was serious in wanting to pursue it. Along the way I’ve had a lot of support from my friends and loved ones, and have generally just been a nice person, open to opportunity and conversation.

HOC: What’s your new year’s intention (we think that sounds more positive than a resolution!) for 2018?

GB: For personal learning, in 2018 I’d like to learn more about Irish and American Whiskey, and also spend a week working at Craigellachie, one of our distilleries in Speyside. That, and as much travel personally and professionally as possible – I love exploring the world.
