In our recent FOOD volume we spoke to some incredible Girl Bosses in one of the most exciting industries out there: the drinks industry. Here’s our interview with Annie Pautsch, founder of the cutest brewery tour around: the Brew Cruz in her hometown of Santa Cruz, California.

HOC: Hey Annie, how on earth did you end up running a brewery tour in Santa Cruz?

Annie: Ultimately it came down to a few key factors: my love for craft beer and wanting to work in or around it, timing, hard work, and no regrets for trying something I’m passionate about. Of course, Santa Cruz itself inspires me with its laid-back vibe and California cool culture.

HOC: What is it about craft breweries that you can’t get enough of?

Annie: The brewers and their unconventional curiosity and creativity. The smell, sound, attention to detail and taste. The environment, ambiance, and vibe– 7 days a week doors are open to everyone without exclusivity, offering a warm, comfortable place to imbibe, converse, relax, connect, and draw inspiration. The history of breweries- their individual stories and legacies.

HOC: When you started out in your career, where did you want it to go? And how does that compare to where you are now?

Annie: My goals for the business have always been in stages, so that I allow myself flexibility when things inevitably go off-course and you have to readjust. Initially I was thrilled just to have passengers on the bus! Now one of the aspects I’m most proud of in my career are the relationships I’ve carefully built and maintained, and the integrity and sincerity with which I’ve run my business. I never set out to expand too quickly, and have definitely made trajectory moves that feel natural and right for maintaining what Brew Cruz ultimately is- a local business.

HOC: What’s it like, being a woman in (what we imagine is) a male dominated industry?

Annie: Powerful. Badass. Natural. The Santa Cruz brewing community, and brewing in general- to its earliest origins, exists because of women. It just so happens a lot of men also enjoy brewing as well.

HOC: Where is your favourite spot in the world for a few beers?

Annie: I have so many favorite breweries, so it ultimately comes down to sharing some of my favorite beers with the most cherished people in my life- family and close friends. Those are the golden moments, and most of them have taken place around a worn kitchen table, in a garage, or on a patio until the late hours of the night. I do a lot of beer-related travel though, and there is a certain unparalleled excitement felt walking into a brewery that’s been on the bucket list for a while!

HOC: In the UK a light stigma around women drinking beer still exists. Is this the case in the US and why is this still a thing?

Annie: Stigmas will exist as long as people allow them to. In the US, I think I see more of an unfounded expectation that if women are going to drink beer, it’s usually something ‘light’. For any new beer-drinkers on my tours (women or men), I try to steer them toward drinking flavor notes they enjoy, period. Forget about how ‘strong’ or ‘dark’ a beer looks or is and just drink what your palate prefers!

HOC: What women are doing great things in the food and drink industry at the moment where you are?

Annie: Emily Thomas of Santa Cruz Mountain Brewing is always at the forefront of innovation and growth for the brewing community. I’ve been impressed by the women-owned food trucks in town like Ate3One. The majority of beertenders at our local breweries are women and they are exceptional.

HOC: Can you tell us about a recent ‘Girl Boss Moment’ you had in your work? ie. an experience where you felt proud that you’d totally nailed it

Annie: I feel most like a boss when I’m able to successfully manage wearing all the hats it requires to run my business- reservations, relationships, maintenance, marketing, bookkeeping, bus mechanic, bus driver, tour guide, beer connoisseur, wife, daughter, and friend. If I’ve done my best and can pop a cold one at the end of a long day while enjoying a sunset, boss lady has nailed it.

You’ve definitely been to a Bompas & Parr event in 2017 – these guys have been everywhere this year with their eccentric edible artistry and we’re super excited to see what they have in store for 2018.

To toast to a great 2017 we asked them to come up with a cocktail you can make at home to dazzle your guests and boy, did they deliver with the Christmas Champagne Scotchtail… it’s as instagrammable as it is tasty and that could be Bompas & Parr’s raison d’être …

Christmas Champagne Scotchtail

This whisky-based twist on the classic champagne cocktail, built in a flute, contains a sugar cube, coated in edible gold dust, to create a sparkling cocktail that’s just right for the season. The slowly dissolving sugar cube combined with the effervesce of the champagne ensure the drink continues to shimmer as you sip.Ingredients:• 35ml Scotch whisky• 150ml non-vintage champagne• 1 sugar cube, coated in gold shimmer dustMethod:Build the drink in the champagne flute using the following steps:• Add a sugar cube coated in edible gold shimmer dust to the glass• Pour over 35ml of Scotch whisky, then top up with 150ml of non-vintage champagne

A change of scenery is always welcome, and while London will always hold the key to our hearts — a little winter couldn’t come at a better time. Because while some places come alive in the summertime, there are those that become truly magical in winter. Such is the case with The Cringletie in Peebles, where our girl Hannah Tan-Gillies spent an idyllic weekend, taking in the magic of the Scottish countryside.

Located in the picturesque Scottish Border town of Peebles, The Cringletie is a 15 bedroom country estate, that oozes personality and charm. The house is a 45 minute drive away from Edinburgh; but one step within its 28 acres of lush greenery and woodlands, and you’ll quickly understand why the drive was so worth it.

Outside, you can explore the historic walled gardens, or take a walk around the natural historical trail which goes for a mile around the estate. Inside, you can cosy up by the fireplace and enjoy the hotel’s classically beautiful interiors; which make plenty of design references to the house’s military history. We are told that the current tartan in the hotel’s grand staircase is a blend of the Wolfe Murray’s and the Sutherland’s; another clever homage to the Cringletie’s past.

Every inch of the house is thoughtfully considered, a personal manifestation of the estate’s history, and the colourful personality of Bill and Anne Cross, the custodians who has lovingly taken it under his wing.

We stayed in one of the hotel’s Luxury Rooms, which exudes a certain kind of timeless appeal. Our room was painted in a muted colour palette accented with rich textiles. It was the perfect balance of classic style and modern features and included a super king-sized bed, a cosy seating area, and an en-suite.

The hotel’s piece de resistance, however, has to be the Sutherland Restaurant. During our stay, the hotel had just received its first – and very well deserved – 2AA Rosette accreditation. Head chef Iain Gourlay certainly brings his 20 year of experience to the table at Sutherland restaurant. Using only the freshest local ingredients, Chef Iain Gourlay adds a creative flair to some classic Scottish favourites – and serves them up in true style.

We highly recommend starting with the Breast of wood pigeon on a puree of boudin noir, followed by the lightly smoked loin of Borders venison, and finishing off with the absolutely delectable Selkirk bannock souffle. We can assure you, that this culinary journey is one you won’t soon forget.

As the evening wears on, we sit by the warmth of the fireplace and delve into the estate’s extensive collection of fine whiskies. Finally ending the evening with warm hearts and revelling in the rare tranquillity afforded by being in beautiful and overwhelming isolation — in one of the most underrated destinations in the world.

Famous desserts do not have to take all day if you are acquainted with when to put in the coffee as an additional element. Method

  • One time the gelatine has dissolved the mixture in the chocolate until melted, in that case, add the hazelnut paste to get an even mixture. Leave that to chill, then cover up and shift to the fridge for 3 to 4 hours to set totally.
  • Preheat the oven to 110°C temperature In the intervening time, make the anise meringue. Put the egg whites in a big bowl and fluff up to a soft crest. Place the sugar and water in a pan and heat till it reaches 121°C, then cautiously add to the semi-whisked egg whites all along with a bit of ground anise. Adding more anise to flavor if needed, beat the mixture constantly to form a meringue
  • Stretch the meringue mixture out on a baking tray lined with the baking piece to a width of 5mm. Bake in the oven for two hours until fully dried out, then set to the side to cool. Increase the oven temperature to 180°C or the gas mark 4.
  • Make the grind by placing all the components into a basin and mixing till it comes together as a bread. Roll out to about 1cm broad and shift to a baking sheet
  • Bake for 20 minutes, then remove from the oven and break up the dough with a fork to obtain a rough crumble. Return to the oven and cook for a further 20 minutes, then set aside to cool
  • For the moment, put together the dulce de leche by adding the milk, sugar and bicarbonate of beverage to a pan. Place over a low down heat and cook till the mix becomes heavily compact and a profound brown caramel in the color. Press any surplus moisture from the gelatine leaf and mix into the milk caramel. Set aside to cool ahead of serving
  • For the coffee dab, put in all the ingredients to a food processor and crack down on until it become even. Pass all the way through a fine sifter to ensure that there are no lumps and tip into a draw off bud vase with the two gas charges.
  • Half fill the paper cups (or a like container) with the dab mixture and roast in a microwave at 600W for 50 seconds – the sponge will spread out so be cautious not to overfill the containers. Allow that to cool prior to carefully removing from the cups and tearing into the pieces. To serve up, shower a grind across each plate, then top it with the pieces of the coffee dab. Add a quenelle of the chilled hazelnut cream and blotch the plate with the spoonfuls of dulce de leche. Smash the anise meringue into the shards and add to the plate, crumbling in excess of a few extra pieces to finish

Coffee plays an imperative, but a strictly offstage role in Christa’s cake. Booklover Mary Houchi of Swansea, Illinois, gave the coffee a more high up place in her brownies by upping the normal teaspoon of the immediate coffee to a tablespoon. Make no mistake, the semisweet chips in the brownies assured that they are more chocolaty, but tripling the java size adds a stronger, other than, well-balanced, coffee taste. Basing a whole trip around an epic film would be crazy (but don’t put it past #TeamCoco!) but we were lucky enough to cram in a number of romantic spots from the movie by simply heading to DTLA’s Grand Central Market.

This year is the market’s centenary as a covered market and refreshingly since 1917 the core values of the market have remained the same. As the City of Stars has had face lift after face lift, the market has maintained its charm and its purpose in the community as somewhere to grab fresh produce, some dinner and a drink and meet a friend.

The current administration of the space want to continue to preserve it as a place that showcases the best of the local area’s produce, chefs and entrepreneurs with carefully vetted vendors and live DJ nights that keep the atmosphere alive.

We could spend all day telling you about where to eat and drink (for instance, Eggslut is a phenomenon, G&B coffee have world class baristas and a green juice from Press Brothers’ Juicery will cure any hangover) but we’re here to walk in the foot steps of our star crossed lovers aren’t we?!

In one of the most heart-soaringly romantic parts of the movie we’re treated to a number of incredible dates where the city of Los Angeles facilitates Seb and Mia falling deeply in love. Within the market you can sit (as many couples who were there did!) at the stools at Sarita’s Pupuseria for Salvadorean cuisine.

Leaving the market to the Hill Street side you will catch a real slice of old Los Angeles with the funicular Angel’s Flight, once the world’s shortest railway when it opened in 1901. This incredible piece of old school public transport had been out of service for years, including when the film was filmed but has since been confirmed to be restored and reopened to the public.

We’d like to think that some movie magic might have helped that to happen…

.If that isn’t enough movie magic for you, we have two options left: jump in a cab up to Griffith Observatory to try out dancing with the stars and incredible views of the Hollywood Sign and the city beneath you.

Or, a little closer to the market, we were tipped off to pop into the Bradbury Building across the road which, while not in La La Land has starred in movies like Blade Runner, 500 Days of Summer and as the Twix factory in the recent TV campaign…

Now I know what you are thinking, incorporating superfoods into your diet is anything but an easy task and it can be especially tricky when you are trying to do so for the whole family. But trust me, I know the struggle and have been through the uphill battle with my rabble – the fussiest lot I know, that would normally stick their noses up at pretty much anything that even merely looks like it could be healthy. But now, after what I would like to call persistence with a side of cunning, my kids can’t get enough of their superfoods.

What’s the secret? – I hear you ask. The secret is in disguising the superfoods and presenting them in a fun way – (now I did tell you that I use some cunning).

If you are looking for a way to easily incorporate 3 superfoods into your diet then you will love this article. Also, check out the handy superfood recipe included at the end of this article that I am sure your little ones will love!

Blueberries – you may be surprised to read that blueberries have some of the highest nutrient levels found in berries and are a rich source of vitamin C, vitamin K, manganese and fiber. Not only that but they have impressively high levels of antioxidants, making them a really key superfood you will be keen to incorporate in your family diet.

Strawberries – not only are strawberries sweet and a great addition to a smoothie delivery or milkshake thanks to their bright colors and great taste, but they are also packed full of goodness and are at the top of my tasty superfood list. Strawberries are a great source of vitamin c – with one serving giving you half of your daily intake! Because of their high levels of vitamin c, strawberries are fantastic for boosting immune systems – just what your kids need to help them fight rotten colds at school as we roll into winter.

Raspberries – another cheap and cheerful way of packing your body full of immune-boosting superfoods. Raspberries are a great source of fiber and vitamin c and are the perfect ingredient for a healthy family. Not only are they full of goodness but they are also sweet and palatable.

Are you looking for the perfect recipe to help your children to get in the superfood zone? Then take a look at the following berry blast recipe that they will love.

For the best results – use frozen fruit as it tends to thicken up nicely and will give your smoothie that chilled and refreshing texture!

Ingredients

½ cup of frozen blueberries

1 cup of frozen strawberries

1 cup of frozen raspberries

1 banana

2 cups of almond milk

Honey – as desired

Directions

  1. Add all of the ingredients together minus the honey in a blender and blend until smooth.
  2. Add honey to taste as required for added sweetness.
  3. Serve chilled.

What’s the trick about getting your children into superfoods? Start with fruits or ingredients that they are already familiar with and like the taste of. Start by making sweeter smoothies and sweeten them with honey if necessary.

One surefire way to make sure your kids will want to slurp down their smoothie is by making it look presentable so try putting it in their favorite glass, alongside a fancy straw and add some garnish or a sliced lemon or pineapple wedge to the side of the glass to make it look exotic. As your kids get used to drinking the superfoods you can begin to be a little more creative with the ingredients and introduce them to new superfoods.

This #TeamCoco writer just got back from a crazy old time away in Los Angeles. A chronic over-researcher with a huge fear of missing out (HUGE!) I did too much and came back a shattered but very happy person. Originally this trip was all about the Girl Boss Rally (see this post) and a few nice foodie things to tell you all about but it seemed to organically turn into so much more…

Incredible people were met, Native American rituals attended, many taco salads wolfed down and lots of embracing jet lag and seeing the dawn happened. Maybe some of this list will be helpful, maybe you’ll just think I’m totally loco and go and have a sit down. Your choice!

2pm: Landed at LAX, grabbed a ‘Pool’ Uber (you’ll usually save 30% on the price of a cab to yourself but your journey will take much longer!) to Sunset Boulevard to set up for a networking event at an incredible Breather.com meeting space

10pm: After an incredible evening of networking it was time to grab a Lyft (another Uber type app) back to Venice Beach to a friend’s for the night.

SATURDAY

7am: Cab to DTLA (Downtown LA) to attend the Girl Boss Rally at Hudson Loft, 1200 S Hope St (see full write up here)

8pm: Cocktails on the roof of the Hudson Loft followed by a quick drink at Lotus Hookah Bar (3742 S Flower St)

SUNDAY

7am: Yay for jet lag! Up, showered and scratching at the door of motorbike shop / cafe Deus Ex Machina (1001 Venice Boulevard) for cold brew and avocado on toast

9am: After walking down to Abbot Kinney Boulevard (a fantastic shopping street) I got the greenest juice I could possibly find from Pressed Juicery (1653 Abbot Kinney Blvd) and warded off aeroplane germs with it, in between snapping the famous ‘colour walls’ of the street.

10:00am: Following the vague direction of the sea, I spied the ocean and sat amongst ladies in athleisurewear meditating in front of the surf.

10:30am: Even in March, the sun is beating down so I wandered off in the direction of the architecturally stunning Venice Canals, then jumped in a cab to Sephora (Waterside, Marina del Rey). When will they open Sephora in the UK?!

12:00pm: After purchasing sun screen at Sephora our outside brunch at Sunny Spot (822 Washington Blvd) is well, not very sunny and we end up in the cosy Venice Alehouse (2 Rose Avenue) with mimosas, tacos and a view of the beach.

2:00pm: Back on Abbot Kinney Boulevard we pop into fantastic stores and sample a Blueberry and Bourbon donut from infamous fried treat providers Blue Star (1142 Abbot Kinney).

4:00pm: We leave Venice and head up to hipster hangout Los Feliz. We fight the urge to buy all the #GirlBoss vibed items at feminist store OtherWild (1768 N Vermont Ave) but do give into incense at beautifully curated BellJar (1764 N Vermont Ave).

8:00pm: Post a very long ‘Pool’ journey back to Venice Beach we order TenderGreens salad takeaway and crash out.

MONDAY

6am: Yay jet lag again! The only coffee shop open at this hour is Stumptown Coffee in the Arts District (806 S Santa Fe Ave) so off we went to soak up the industrial vibes and try to mainline Cold Brew coffee with chocolate milk…

10am: You can’t visit Los Angeles without checking out Bottega Louie (700 S Grand Ave) It’s an astonishing grand cafe style restaurant that makes you feel like you are in the Hotel Budapest. The macarons are legend.

11:30am: We geeked out a crazy amount at the incredible California Science Centre (700 Exposition Park Drive) with the Science Behind Pixar exhibit and epic IMAX feature ‘Dream Big’. Told you we were massive geeks.

1:00pm: Accidental vegan lunch at Wild Living (760 S Main St) Foods gives us enough energy to check out The Original Farmer’s Market (6333 W 3rd St, more on this in another post soon!)

7:00pm: Back to Venice Beach for truffle fries and local craft beers at quirky Hotel Erwin (1697 Pacific Ave)

REVIEW: CAVE DU COCHON, YORK

When esteemed French restaurant Le Cochon Aveugle opened up a Parisian style wine bar you know it’s THE must go place when in York. Over 60 wines are on offer from across the World and more than 30 by the glass, focusing on bio-dynamic and organic wines from the best independent and small producers. They also offer a delicious range of charcuterie and cheeses brought straight from France and Corsica each week.

Equipped with their wine buff Ian and in-house foodie connoisseur Dave, we were treated to an incredible board of meats, cheeses and their homemade sourdough, perfectly paired with our chosen wines. A visit to Cave du Cochon felt like being transported to the Champs-Élysées minus the air fare, we can’t wait to return to work our way through the rest of the menu.

REVIEW: LAKESIDE CAFÉ NEWMILLERDAM
‘WAKEFIELD’S MOST PICTURESQUE RESTAURANT’

A little bistro with a big reputation, Lakeside Café and Bistro are a firm favourite among their local diners for their hearty breakfast, brunch, afternoon tea, generous Sunday dinners and varied bistro menu. Located in Newmillerdam village in Wakefield, we visited on Valentine’s weekend and what a romantic treat it was, indulging in their ultimate comfort food with live music from one of Yorkshire’s up and coming performers. TACOS ARE THE FOOD TREND OF 2017 & STREET CLEAVER SHOW YORK HOW IT’S DONE

Tacos are officially the foodie trend of 2017 and we don’t mean the highly breakable, bright yellow half-shells in the back of your cupboard. We mean authentic, homemade soft tortillas with killer toppings to wrap your chops around.

Known for his fresh and exciting Asian style street food chef Mark Hill of ‘Street Cleaver’ has taken up permanent residency at the popular Evil Eye Cocktail Lounge in York. After seeing his mouth-watering tacos lighting up our Instagram feed, lunch plans were sorted.

Three incredible tacos devoured of ‘Korean Crispy Chicken’ with citrus dressed slaw, pickled radish and chili ailoli and ‘Confit Miso Belly Pork’ with cheat vegan kimchi, pickled cucumber and hoisin, we were blown away by the taste and fresh ingredients. Paying a visit to sample Street Cleaver’s food is a must next time you’re in York.

We finally got the chance to visit the recently awarded 3AA rosette The Park Restaurant in York to sample the hyper seasonal 8 course tasting menu from acclaimed Chef Adam Jackson.

Located in a beautiful Victorian town house just outside York’s historic city walls, we were absolutely blown away by the presentation of each dish and the interesting texture and flavour combinations. We also took full advantage of in-house Sommelier and Restaurant Manger Ben Macleod’s knowledge, which made this visit a foodie treat to remember.

GETTING IN ON THE GIN AT GIN FESTIVAL YORK

I’m daring to say that gin is now as big as prosecco with local micro distilleries to city centre gin bars popping up everywhere. We paid a visit to Gin Festival’s York event, where tens of thousands of gin enthusiasts were brought together to discover over 100 gins, masterclasses with knowledgeable producers, cocktails and live music to celebrate all things gin! We’ve been to a few different spirit events over the last few months but nothing comes close to our experience at Gin Festival York.

So quick and easy, these fluffy, puffed up pancakes are layered with fried chicken and bacon for a savoury twist. I’ve used Sublime Chimichurri Butter, but you can use regular butter if you prefer. Pro tip: Cook the chicken in the oven and finish with a quick deep fry to keep the meat extra juicy.

Ingredients:

135g plain flour

1tsp baking powder

2tbsp caster sugar

Pinch of salt

130ml milk

1 egg

2tbsp Sublime Chimichurri Butter (plus extra, for frying)

To serve:

Fried chicken

Cooked smoked streaky bacon

Maple syrup

Method:

  1. Sift the flour and baking powder into a large bowl. Stir in the sugar and salt.
  2. Melt the chimichurri butter and leave to cool for one minute.
  3. Whisk together the milk, egg and melted butter. Combine with the dry ingredients and whisk to form a stiff batter.
  4. Heat a little chimichurri butter in a pan set over a medium heat. Add a ladle of pancake batter and cook until the top starts to bubble. Flip the pancake over and cook for another 30 seconds. Remove from the pan and repeat.
  5. Layer up the pancakes with the fried chicken and bacon. Drizzle with maple syrup and serve immediately.
